Zucchini Lasagna

So I figured I'd surprise some of you who actually follow my blog and make a post!  I concocted a pretty great dinner tonight that I think is only about 7 Weight Watcher Points+ per serving, so I HAD to share.  It's a combination of several recipes that I sort of made into my own and we LOVED it!  Hope you enjoy, too!
- Spaghetti Sauce (either homemade or from the can/jar)...I made homemade, but if you use the canned kind, you will probably need about a can...maybe more, depending on how much sauce you like
- 1 pound ground turkey, seasoned and browned
- 3 medium zucchinis, sliced thin
- 16 oz low-fat ricotta cheese
- 1 egg
- 1 cup grated parmesan cheese
- 1 cup low-fat shredded mozzarella

Preheat oven to 350ยบ. Mix ricotta, parmesan and the egg together in a bowl and set aside. Now you just layer! Spread a layer of spaghetti sauce in a 9x13 pan, then sprinkle 1/2 the ground turkey on top of the sauce, layer sliced zucchini, spread 1/2 of the ricotta mixture and repeat the layers one more time, ending with the ricotta layer.  Spread a thin layer of sauce over the ricotta layer and top with shredded mozzarella.  Bake for 30-35 minutes or until bubbly and hot. Enjoy!  Serves 8.

Need Suggestions...

A few weeks ago, I decided to invest in an Immersion Blender. One main reason is because I was craving my friend Jamie's Cream of Cauliflower Soup and the last time I made her recipe, I dirtied a lot of dishes, including the blender that I had to dig out from the back of our pantry...so I thought this product would be perfect! I could do everything in one pot.

It was awesome and the soup is SO yummy. Tastes like a potato soup but much healthier. So, I need some ideas now. My husband thought this was a stupid purchase and can't imagine what I could possibly "need" this thing for. I have a really good salsa recipe that I am going to make this week and I love to make soups and smoothies, but I need more. What are some things you make with your immersion blender if you have one?  I must prove the hubby wrong ;)

My Favorite Soup

Kelly is looking for soup recipes, so I just HAD to share this one because it's amazing and SOOO easy. Enjoy!

Easy Vegetable Beef Soup

Brown 2-3 lbs ground meat.
Add 32 oz beef broth
15 oz can stewed tomatoes
29 oz can Veg-all
30 oz can hominy
15 oz can tomato sauce
1 16 oz bag frozen corn
1 16 oz bag frozen green beans
1 bag frozen cut okra
2 cups water
seasoned salt (to taste)
garlic powder (to taste)
onion powder (to taste)
Natures Seasoning (to taste)

Mix all the ingredients in a big stock pot and heat until boiling. Then just let it simmer as long as you'd like. The longer...the better! (I usually simmer for a couple of hours I guess)

Fullbar

So I still have plenty of baby-weight to lose (yes, I know she's almost 2 years old. That's the sad part) so I'm doing what I know works for me - Weight Watchers. This morning I'm trying a Fullbar to see if it really does what it says.


Now I'm usually hungry by 11:00 a.m. we'll see how long this 3-point bar keeps me full this morning. I ate it at 7:45 a.m. Has anyone else tried them?

Happy Birthday PawPaw
